岩崎は、歯ブラシ、タオル、本の栞、ダクトテープなど身の回りの日用品を用いて繊細で儚い風景を作り出し、私たちが日常を送る中で見過ごしている現実を、対象との距離、スケールを変えて可視化することで、固定化された私たちの視点を揺さぶり、意識を変容させる。床に雑然と積み上げられたタオルに鉄塔が建つ様は、山奥の送電線を支える鉄塔を想起させ、林立する文庫本の栞にクレーンが建つ様は、まるで建設中のビル群を見ているようだ。
また、歴史的な建築物の地上の実像と水面に反射する虚像を一体化させた姿を、ヒノキの木片で精巧に再現する「リフレクション・モデル」も岩崎の代表的なシリーズとして知られる。これらの作品が生まれた背景には、岩崎が生まれ育ち、現在も拠点にしている広島が、かつて原子爆弾によって一瞬にして壊滅し、戦後の復興期に軍事都市から平和都市へと180度転換した史実からの影響が見て取れ、岩崎自身の時間への意識を感じさせる。
2015年には小山市立車屋美術館、黒部市美術館、ニューヨークのアジアソサエエティにて個展を開催、2017年には第 57 回ヴェネチア・ビエンナーレ国際美術展の日本館代表作家に選出された。
近年は、「あいちトリエンナーレ2019 情の時代」(伊藤家住宅、2019年)、「日本・キューバ現代美術展 近くへの遠回り」(ウィフレド・ラム現代美術センター 、ハバナ、キューバ、2018年)、「水と土の芸術祭 2018」(万代島多目的広場、新潟、2018年)、「MAMコレクション005 リサイクル&ビルド」(森美術館、東京、2017年)、「奥能登国際芸術祭2017」(三崎地区 森腰の古民家、石川県、2017年)、「PARADOXA-ARTE GIAPPONESE OGGI 」(ウディネ近現代美術館、イタリア、2016年)、「日産アートアワード2015」(BankART Studio NYK、神奈川、2015年)、「INVENTO -The Revolutions That have Invented us-」(OCA Museum、サンパウロ、ブラジル、2015年)、「We can make another future: Japanese art after 1989」(クイーンズランド州立美術館、ブリスベン、オーストラリア、2015年) など、国内外を問わず数多くの展覧会に参加している。
2018年、芸術選奨 美術部門において、文部科学大臣新人賞受賞。
